About Us

We are a restaurant where you can experience the dining culture of USHG, originating from New York.

Union Square Tokyo, the first overseas establishment of USHG, opened on March 30, 2007, in Tokyo Midtown, Roppongi. USHG stands for Union Square Hospitality Group, a restaurant company leading the dining culture in New York. The restaurants managed by USHG, such as Union Square Cafe, Gramercy Tavern, and The Modern, are all unique and have been beloved by New Yorkers for many years. Their common trait is "Vibrant." meaning full of energy. Enjoying dishes made with seasonal local ingredients, engaging in conversations with knowledgeable and hospitable staff, and spending time with like-minded friends to invigorate yourself for tomorrow. This is the way to enjoy a USHG-style restaurant. We want you to experience this dining culture. We want you to feel comfortable. And we wish to enrich the lives of every one of our guests. This is our desire.

"Our vision is to enrich the lives of our guests by creating exceptionally comfortable restaurants." Each member, from chefs, managers, maître d'hôtel, bartenders, to sommeliers, takes pride and responsibility in their respective roles, striving to make our restaurant one of the best in Tokyo.

Executive Chef

After moving to Tokyo from Fukuoka at the age of 20, he began his culinary journey at La Rochelle in Shibuya. He joined Wonder Table in 1998 and, after serving as the head chef of their Italian restaurant, became the founding head chef of Union Square Tokyo in 2007. In September 2015, he took on the role of head chef at Terres de Truffes Tokyo. He returned to Union Square Tokyo as the head chef in 2018, and in 2023, he was promoted to executive chef for the entire Wonder Table group. His ambition is to bring the allure of New York cuisine to Tokyo and create a restaurant that remains beloved by all.

He moved to Tokyo at the age of 19 to pursue his dream of becoming a chef. After gaining experience at various Italian restaurants within the company, he joined Wonder Table at 22 in 1999. In April 2023, he was appointed head chef of Union Square Tokyo. His goal is to create an exceptionally comfortable dining experience.

Daiki Nakagawa

Daiki Nakagawa

Manager

Starting his career as a bartender in Aoyama in 2006, he joined Union Square Tokyo at Wonder Table in 2008, gaining experience as a service manager and sommelier. He later managed Obicà Mozzarella Bar's Yokohama and Roppongi Hills locations. In April 2023, he was appointed manager of Union Square Tokyo. With a profound understanding of the New York flagship’s 30-year legacy, he aims to create a fine dining experience in Tokyo that epitomizes true hospitality.

Our Cuisine

Union Square Tokyo fosters strong connections with local farmers, frequently visiting to procure seasonal produce. They present simple dishes that highlight the excellence of these fresh ingredients.
Although "simple" may imply minimal effort, their technique includes careful preparation and elegant presentation that disguises the complexity involved. Their menu evolves with the seasons, featuring dishes that result from thorough testing and fine-tuning.

Layout

Large windows create an inviting, open atmosphere in the layout. Upon entering, you'll first encounter a U-shaped bar counter that’s perferct for drinks and dining. Next, you’ll find a kitchen dining area where you can experience the lively energy of the chefs at work, leading into the main dining area designed for intimate meals and conversations. At the back, there's a private room suited for smaller gatherings. Seasonal outdoor terrace seating is also available. Overall, the entire space is designed to ensure that guests feel comfortable and at ease, no matter the occasion.
