After moving to Tokyo from Fukuoka at the age of 20, he began his culinary journey at La Rochelle in Shibuya. He joined Wonder Table in 1998 and, after serving as the head chef of their Italian restaurant, became the founding head chef of Union Square Tokyo in 2007. In September 2015, he took on the role of head chef at Terres de Truffes Tokyo. He returned to Union Square Tokyo as the head chef in 2018, and in 2023, he was promoted to executive chef for the entire Wonder Table group. His ambition is to bring the allure of New York cuisine to Tokyo and create a restaurant that remains beloved by all. passion for becoming a chef, he moved to Tokyo at 19. After gaining experience at various Italian restaurants within the company, he joined Wonder Table at 22 in 1999. In April 2023, he was appointed head chef of Union Square Tokyo. His goal is to create an exceptionally comfortable dining experience.

Driven by a passion for surprising guests—a spark first ignited during his years as a street dancer—he embarked on a culinary career that began in the bistro scene. Since joining Wondertable Co., Ltd. in 2017, he has honed his expertise at Union Square Tokyo and led various high-profile projects, including new restaurant openings and e-commerce development. As of 2025, he leads the kitchen of Union Square Tokyo as Head Chef. By synthesizing a distinctive New York identity with refined culinary artistry and space, he creates dynamic and uplifting moments for every guest who walks through our doors.

After gaining extensive experience in Japanese and Italian cuisine, Shoko Taga joined Wondertable, Ltd. in 2021. Following her tenure at the Obicà brand, she was appointed General Manager of Obicà Mozzarella Bar Nishi-Shinjuku in April 2023, before taking the helm at Union Square Tokyo in July 2025. Deeply respecting the 30-year heritage of the New York original, Shoko is dedicated to delivering the ultimate hospitality, striving to make Union Square Tokyo the city’s premier fine-dining destination.
