From Monday, October 27th to Monday, November 24th, 2025, we will be offering a menu using the rare Japanese Shorthorn Beef (commonly known as Tankaku Beef), which will be arriving for the first time this season.
Wondertable's production support project supports the future of rare Wagyu beef
Wonder Table has been working on various initiatives since 2015 to ensure a stable supply of high-quality lean Wagyu beef. As part of this, we have introduced "Tankaku beef" calves in-house and are raising them in collaboration with producers in Yamagata Town, Iwate Prefecture. Tankaku beef, which is raised in a healthy, pasture-raised environment rich in nature, is a rare breed, accounting for only 0.5% of the total Wagyu beef in circulation.
When it was sold on a trial basis at various restaurants, it received positive feedback from customers, and it has now been made available at Union Square Tokyo.
This season's first Tankaku beef menu
Union Square Tokyo has prepared a limited-time menu that makes generous use of this season's newly arrived Tankaku beef.
The steaks are a delight, with a powerful meaty flavor and juicy texture, while the tartare and sandwiches offer a delicate red meat flavor and contrasting textures.
