Michael Romano, executive chef at Union Square Cafe in New York, has created numerous masterpieces. His solid technique and sensibility have been present in the cuisine at UNION SQUARE TOKYO since it first opened. This month, we will be serving one of his signature recipes, which has been loved in New York.

The main ingredient, porcini mushrooms, are a luxurious autumn ingredient known for their rich fragrance and flavor. To maximize their flavor, they are incorporated into the gnocchi dough as well as the sauce. The chewy texture of the gnocchi is layered with the mellow, fragrant sauce, creating a deep, flavorful dish.
